If you have a few dollars for a few ingredients and a few minutes to put this together, you can make a delicious dessert for the holidays! This dessert is one of my favorites. The ingredients are easy to find, it’s inexpensive to put together and it makes a lot of servings.
This recipe works best in a dutch oven or a ceramic baking dish. You will bake it covered, so be sure you have a lid or top for your dish. I’ve never tried, but friends have said that other fruit pie fillings can be substituted and are equally as delicious.
Start with the pineapple. Once opened, drain some of the juice from the can, but not all of it. Simply empty the pineapple in the bottom of your dish and spread evenly. Add the cherry pie filling and spread over the pineapple.
Empty the dry cake mix over the cherry pie filling and spread evenly with your hand. Psst – Now would be a good time to preheat your oven to 350 degrees. Then, start with one stick of butter and slice it into squares to cover the top of the cake mix. You may or may not use both sticks of butter, but hey – everything is better with butter!
Finally, if you like pecans, sprinkle them on top of the butter. I typically only have pecans on half of my dessert for those that prefer it without them. I’ve also never tried substituting an alternate for the pecans, but would love to hear how it tastes if you try something different!
Bake your dessert covered at 350 degrees for one hour. Voila! Let it cool to your liking and serve. If you have leftovers, simply cover and refrigerate for tomorrow! This is an awesome breakfast treat slightly warmed in the morning, especially when it is cool outside.
I have to tell you that this recipe was given to me by my dear friend, Julie. We went to church together for many years. This was the dessert I always looked for if I knew she was bringing a dish! And although I am a perfectionist in most things, I love the imperfections in a homemade dessert. So this year, try something new and pass it along to a friend of yours. It may be their favorite dessert! Happy tasting!
